  • 1/2 cup (1 stick) unsalted butter

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 3/4 cup milk

  • 1/4 cup lemon juice (freshly squeezed)

  • 1 tablespoon lemon zest

  • 1 cup hot water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or non-stick spray.

  2. In a small saucepan, melt the unsalted butter over low heat. Set it aside to cool slightly.

  3. In a mixing bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.

  4. Add the milk, lemon juice, and lemon zest to the dry ingredients. Stir until just combined.

  5. Pour in the melted butter and gently stir until the batter is smooth.

  6. Pour the batter into the greased baking dish. Do not mix once it’s in the pan.

  7. Carefully pour the hot water over the batter. Do not stir; it will naturally settle and create layers as it bakes.

  8. Bake for 45–50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

  9. Let cool for a few minutes, then serve warm and enjoy the gooey lemon center and golden cobbler top.
